As I mentioned in the original post, I would try to find ways to make a healthier dessert/snack and one way is to make a sorbet. How is it healthier? well, there is no cream/milk, usually less sugar and some fruit puree. Since I wanted to make this fun for the kids and try something new, I decided on pineapple for the sorbet, as I have never, yes never, cut up a whole pineapple. I do not know why I felt intimidated in the past, but I went for it and had so much fun. It was so juicy and easy that this is now my favorite way to have pineapple.
Also, instead of sugar, I used agave nectar and only 1 tablespoon at that. After making this sorbet with simply using fresh pineapple, water, lime juice and agave nectar, I am convinced more than ever that we add way to much sugar to everything. I should also state that this sorbet was on the icier side since pineapple has such a high water content.

1 pineapple, peeled, cored and roughly chopped
1 tablespoon line juice
water, I used ~1/3 cup as an aid while pureeing the fruit
1 tablespoon agave nectar
I placed the pineapple chunks and lime juice into the blender and pulsed. I intermittently added water to aid in blending and to get the consistency I wanted. Finally, I added the agave nectar, pulsed a few times and placed all into my electric ice cream maker.
