Greek Chicken Pizza Recipe: A Leftover Chicken Delight

Greek Chicken Pizza Recipe as made by using leftover chicken, remaining feta, and a few remaining olives from a can to make this pizza. Ole!

We have had cheddar jack the cat for three days now. 

We have also had some leftover baked chicken breasts for three days.

Therefore, I grabbed two pizza shells and decided to make two different pizzas that you can make (or skip and keep it vegetarian) with leftover chicken.

Greek Chicken Pizza Recipe (Yield – 8 slices)
Ingredients:
1 prepared pizza crust (I used whole wheat ‘Top This!’ brand)
4 teaspoons Greek salad dressing
1 1/2 cup shredded mozzarella
Leftover chicken, torn or chopped
1/2 tomato, chopped
1/2 cup chopped olives
Sliced red (or any) onion
1/3-1/2 cup crumbled feta
1/3 cup chopped baby spinach, lettuce etc.

Directions:
1. Preheat the oven according to package instructions. If you wish to use a pizza stone, place it in oven for a minimum of 20 minutes before you cook the pizza.

2. Prepare the pizza by spreading the salad dressing onto the crust. Top with mozzarella, chicken, tomato, olives and onion. Bake according to package directions. Remove the pizza, sprinkle on the feta and spinach/lettuce and serve.

    Those made-in-Rhode-Island pizza crusts are fantastic. I’ve been using them with all sorts of leftover bits in the fridge, too.
