Breakfast can get boring.
Open the cereal box, pour, add milk, get the sugar rush and go on your way.
Let’s up the ante and fill all our bellies with something else and dang it, it better be easy right? Right!
Simply whip this together in 3 minutes, shove it in the oven, go rustle the kids out of bed, brush your teeth, pack the lunchboxes and these mini-frittatas are ready to be consumed.
1/3 cup 1% reduced-fat milk
A handful of baby spinach, minced (use a favorite herb if you wish)
1-2 slices of ham, chopped
A handful of shredded cheese (I used cheddar)
1/8 teaspoon fine salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder, optional
1. Preheat the oven to 350 degrees.
2. Whisk the eggs and then toss in remaining ingredients and mix well.
3. Spray a mini muffin pan with cooking spray and fill each well 3/4 full with egg mixture.
4. Bake for 20 minutes.
