I was starting to wonder if I had really given birth to our son or if it was a dream because until recently, the boy did not care for cheese.
That is not acceptable in this family. Luckily, he changed his tune and is now obsessed.
2 cups of cooked brown rice
1/2 cup shredded cheddar cheese
1 scallion, minced
salt & pepper, optional
1. Place the brown rice in a bowl and reheat in a microwave if necessary.
2. Toss on the cheese and scallions and mix until the cheese is melted. Season with salt and pepper to taste.
