In the past, I have shared recipes for breakfast, lunch and dinner noting that both the hubby and I work from home and that not every recipe is made for ‘the family’ but sometimes just for the grown-ups.
Today is just an example where my hubby and I both needed lunch AND I had just seen a commercial for Panera Bread’s new power menu. Therefore, I decided to whip together a version of their Power Chicken Hummus Bowl for our lunch.
Luckily, I had just cooked a bunch of chicken breasts for just this type of occasion. Do you do that? Cook a few proteins and sides at once and then toss together something when called for? Why not? Snap to it people.
1/2 cooked chicken breast
2 Tablespoons hummus
1/3 English cucumber, sliced
3-4 slices of red onion
1 small tomato, chopped
Prepare all the ingredients, toss in a bowl, top with a light vinaigrette and dig in!
