
This recipe came to be as on my way home from Physical Therapy today, I was in need for some comfort food. I also wanted to make my hubby a comfort food type of lunch and naturally, for me, that means cheese.
I thought back to my lunch with Kim #1 & the sandwich she made and I knew this ‘Kimmy’ creation needed to be re-created and consumed in my kitchen.
Ingredients:
2 slices of quality bread
A teaspoon of unsalted butter (or use ‘butter’ cooking spray)
A few slices of part-skim mozzarella cheese
1/3 of a pear, sliced
A few smears of fig preserve (heck, use a jelly if you like)
Directions:
1. Preheat an indoor grill or pan. Lightly butter one side of each slice of bread.
2. Spread the fig preserve on the unbuttered side of one piece of bread, top with mozzarella cheese followed by the pear. Top with the unbuttered side of the remaining slices of bread.
3. Place onto the grill/pan and toast on each side until lightly browned and cheese is lightly melted.

Cheese, yes please! I have a question, I am not a fan of rosemary. Is there another herb bread that would work good with this recipe?
You go ahead and use any bread you like Shana – I simply could not resist that loaf when it was staring at me at the bakery.
