Pastapalooza: Cobb & Rotini Pasta Salad Recipe {Giveaway}

When it come Summer cooking, I want fun, easy dishes that do not include hours near a hot stove. One dish that often pops into my mind as perfect for the Summer is pasta salad.

Now, you may not think of Cobb salad as a main dish but it was almost always what was served for Sunday lunch when I was in my teens and 20’s.  Sometimes there were veggies included that one may not consider ‘standard’ as my Mom often tossed on any veggies left in bits and pieces in the Tupperware.

I added a slight twist by omitting the lettuce and using Dreamfields rotini pasta instead. I also added kidney beans and fresh herbs from the garden but not until after I took the photos. It was a big hit with the family as most kids would take pasta over lettuce any day.

Cobb Pasta Salad Recipe

Cobb & Rotini Pasta Salad Recipe (Serves 6)
Ingredients:
1 box of Dreamfields rotini pasta, cooked and cooled
2 boiled eggs, chopped
1/4 cup minced red onion
1 cup chopped cooked chicken
3 slices cooked and crumbled bacon
1/2 avocado, chopped
1/3 cup shredded cheese
1 tomato, chopped

Directions:
Toss of ingredients together with cooled pasta ans serve with your favorite vinaigrette.

    My favorite main dish would be fish. I have this great sole dish that I make and pasta salad is the perfect side!

    Chicken Enchiladas. Wouldn’t be that hard. Lots of chicken and cheese, fresh made green salsa, black olives and grape tomatoes for color. Make a dressing using sour cream and lime juice. You could add some whole kernel corn. It would taste good but add carbs. And of course, Dreamfields (rotini) Pasta. I’m heading to the store right now. Yummy!

    Last night I converted a steak salad into a pasta salad. I thin sliced left over steak and added to an Italian pasta salad. Now I wish I had also added garbanzo beans. It was great.

    Shrimp scampi makes a great pasta salad. Saute shrimp with garlic, butter, and lemon. You can add white wine too, if you like. Cook only 3-4 minutes.Toss with pasta of your choice, grated parmesan cheese, and sprinkle with fresh parsley. If too dry add some olive oil. Serve it hot or cold.
