Phew, we made it through the first week with me/Mom working back in the pharma. industry with only a few bumps.
I planned out our food for the week and shopped last night for this coming week. Since I have Friday off for a long Memorial weekend, I left that night unplanned as we have not figured out what we are doing this weekend but I do know that it will involve some adventures!
Here is what I have planned for this week, May 19th – May 22nd:
Meatless Monday: Speedy Vegetarian Cheese Tortellini Soup with the addition of some zucchini.
Tuesday: Pasta with Bolognese & a salad.
Wednesday: Tilapia topped with salsa & brown rice side dish.
Thursday: Italian Shrimp & Sausage over Spaghetti.
I also hope to share some of my bring to work lunches as well. Enjoy!
