Isabel’s Green Beans

These are one of Isabel’s favorite sides (courtesy of Semi-Homemade Cooking). Naturally, the bacon is eaten first and then the beans and garlic.

Ingredients
1 pound frozen green beans
1 tablespoon water
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
4 cloves peeled garlic, thinly sliced
4 strips pre-cooked Turkey bacon, chopped
Salt and pepper

Directions
Place green beans and water in a microwave safe bowl. Cover with plastic wrap and cook on high setting for 5 to 6 minutes. Stir and check for doneness (thoroughly heated and crisp-tender). If necessary, recover and cook an additional 1 to 2 minutes.

While green beans are cooking; in a large pan, heat the butter, oil, sliced garlic, and chopped bacon gently over medium heat. NOTE: Be sure not to let the garlic burn – a light golden brown is as dark as garlic should get.

Drain any remaining liquid from the green beans and add to frying pan. Toss to coat beans and season with salt and pepper.
