EatingWell Wednesday – Sugar Snap Pea and Shrimp Curry

I love when you have a dish that is so wonderful that you can mix it with Brown Rice and get away with it. That is the case with EatingWell’s Sugar Snap Pea and Shrimp Curry recipe.

The only changes I made were:
1. I used plain curry and then added some Hot Madras Curry Powder onto my husband’s serving.

2. Used less than 1/4 cup lemon juice

3. I also tossed some chopped parsley on when I served it.

Can you tell my son (who swears he does not like shrimp) liked it?
