Orchard Chicken Salad Sandwich ala Subway

Although we rarely eat out, we sometimes love going to the beach after the crowds have left for the day and have stopped by Subway a few times to grab a grinder. One of my favorite’s on their menu right now is their Orchard Chicken Salad Sub.

I have found it to be a great way to use leftover chicken and I now make it myself buy with lots of extra apples and raisins. The kids always eat my sandwich after I only get one bite in so now I know to make enough for four.

Ingredients (4 servings in small roll)
1/3 cup raisins
1/3 cup dried cranberries
1 stalk celery, minced
1 golden delicious apple, diced
1 chicken breast, cooked and diced
4-6 Tablespoons light mayonnaise (adjust to your preferred texture)
1 handful of lettuce
4 small rolls, split

Mix ingredients from raisins to mayonnaise in a bowl. Place some lettuce on bottom bun, scoop chicken salad on top, place top of bun on and enjoy.

    Yes, Katie. In fact, that was my intention and I was shocked to find we were out so I dug out the bag of plain dried cranberries (don’t tell the kids)

    That looks amazing! I wonder how it would taste if I substituted craisins for raisins. Have you ever tried it?

    This is a great recipe, and I’m sure I’ll use it frequently. Like Crystal, I was disappointed when I tried Subway’s version. The ingredients weren’t fresh. I might add a dash of curry to change it up a bit.

    I love chicken salad sandwiches, but I wasn’t a fan of Subway’s – I think because it is not fresh and the crispy ingredients are not as crisp after it has sat there for a while. I love your combination. I also like to add cucumber, bell pepper and sunflower seeds.
