Orzo Salad

Today we are going to a school social and I was asked to bring an Orzo Salad. This recipe is one that is often requested and I am happy to oblige.

Question: Do you know where your town’s bed and breakfasts are (hint for upcoming post)?

Ingredients (serves 8+)
1 box of Orzo, cooked and drained
1.5 cup baby spinach, roughly chopped
1/4 cup parsley, chopped
3/4 cup feta, crumbled
1/3 cup red onion, chopped
1/2 cup red pepper, chopped
1/4 teaspoon ground pepper

While the orzo is cooking, prepare all other ingredients. Combine all ingredients in a bowl and mix well. For the dressing, I simply poured some olive oil, balsamic vinegar and red wine vinegar in a bowl and whisked well. I then tasted the dressing and adjusted to my taste.

    That is true – I found a local fine foods store that order it for us. Naturally, I feel the need to buy a number of boxes but we use it so no biggie.

    Love orzo salad in any form! The frustrating part is trying to find whole wheat orzo.
