EatingWell Wednesday – Tilapia Corn Chowder

It has been a while since I have: 1. done an EatingWell post and 2. Made some soup but this week I have gone soup crazy. Nothing like cold fall evenings to bring out the cravings for soul warming soup and since I had some Tilapia waiting in the refrigerator, I made Tilapia Corn Chowder .

In this instance, we used frozen corn and maybe, just maybe an extra two slices of bacon. Personally, I love my bacon crispy so I cooked it really well, let it cool and then chopped and added into the pot.
