A Journey with Steel Cut Oatmeal & Oatmeal Recipes

I have never been a big ‘healthy’ oatmeal consumer. Yes, when I was younger, I made my mom or grandma happy by occasionally ingesting some overly sugared instant oatmeal but I have not really pushed myself to enjoy oatmeal as an adult. But that is changing starting right now.

The past two weeks, I have purchased Starbuck’s ‘Perfect Oatmeal’ twice and added the berries, nuts and some brown sugar and have actually enjoyed it. Now it is time to put the steel cut oatmeal (that I bought three months ago) into the crock pot.

Have you made steel cut oats? A few times I have tweeted out asking folks how to make it and most replies include the word ‘crockpot’. Have you used the crock pot to make an oatmeal recipe? Can you share some of your favorites recipes?

    We LOVE steel-cut oatmeal but my crock-pot is cranky and I can’t get a good batch from it.

    I make mine on the stove top and it’s easy — EASY!

    Toast 1 C of oats in a have saucepan (some people use butter to do this, but I don’t).

    After a minute or two, you’ll start smelling the toasted smell — at that point, add two cups of hot/boiling water. When the combo of oats/water boils, lower the heat, cover, and let it simmer for about 20 minutes.

    After 20 minutes, most (if not all) of the water should be absorbed. Remove from heat and add 2 TB of Almond Milk (or milk/buttermilk). Stir.

    Portion out (this will make 4-6 servings); for my servings, I add about 1/4 cup of plain Greek Yogurt, 2-3 tsp of Raw Honey, and 1/2 of Frozen Blueberries (now that they’re not in season anymore – otherwise, fresh).

    Mmmm — SO good. My toddler and preschooler gobble this up!
