Appetizer Recipe: Baby Red Potatoes with Sour Cream & Bacon

As I mentioned the other day, I had a fun girlfriend-only appetizer party and wanted to serve finger foods that could all be served cold or at room temperature and have at least part of the recipe prepared the day before. This recipe was one I served and is so darn easy and is a sure winner considering it has sour cream and bacon.

Oh, but no worries, I used light sour cream and if you stick to eating only 2 or 3 (alright 4), you have maybe eaten a third of a piece of bacon.

Baby Red Potatoes with Sour Cream & Bacon (Yield: 24)
Ingredients:
3 slices precooked pork or turkey bacon
12 small red potatoes, washed, unpeeled, and halved
1/2 cup reduced-fat sour cream
2 scallions, sliced green onions
1 teaspoon chopped fresh parsley
Dash ground pepper and salt

Directions:
1. Warm the bacon in microwave as directed on the package and set aside.

2. Wash and dry the potatoes. Cut them in half and place them in microwave safe container. Sprinkle about a teaspoon of water onto the potatoes, cover tightly with plastic wrap and microwave about 8 minutes. Check them to be just fork tender and microwave more if necessary. Remove the potatoes and place onto the serving platter to cool a bit.

3. Meanwhile, mix the sour cream, scallions, parsley, salt and pepper together. Chop the bacon and then assemble the appetizer by placing some of the sour cream mixture on the potato, scatter some bacon on top and serve.

    Wonderful little appetizer! Kinda reminds me of the classic potato skins, but updated. I think this would also be wonderful with a mix of different fingerling potatoes.
