Grilled Shrimp, Chicken and Fruit Platter

I made, I jarred, I marinated, I grilled. Sounds promising right? The other day you may recall that I made the Garlic, Lemon & Rosemary Infused Olive Oil (thank you for your kind words and support!) so I decided to marinade some shrimp and chicken legs in it and create a tasty platter for dinner.

We needed a simple, easy and tasty dinner. With both kids out of school for the summer, trying to sell the house, worrying about our family member’s health and planning a trip, we needed a healthy but no-fuss meal. This footed the bill.

Now no excuses for running out to pick up dinner – dig in!

Ingredients (serves 4):
1 lb. 26-30 shrimp, thawed and peeled
1 lb. organic chicken legs or wings
1 cup of the garlic, lemon & rosemary infused olive oil, divided in two 1/2 servings
1/2 cantaloupe, sliced
A few slices of fresh mozzarella
A few fresh organic strawberries

Directions:
1. Simply place the shrimp and chicken into two separate storage bags and coat well with 1/2 cup each of the infused olive oil. Marinade for a minimum of thirty minutes.

2. Prepare the fruit and cheese.

3. Heat the grill and cook the chicken and shrimp until done.

Easy-Peasy!
