BLT (Bacon, Laughing Cow & Tomato) Gluten Free Breakfast Polenta Bowl

This past weekend I attended the She Streams Conference in NYC. During a keynote speech, one of the women made the following statement: ‘If you always do what you have always done, you always get what you always got’.

The statement has stuck with me and I applied it to my morning eating habits.

At 9 am today, I went to my pantry and stared at the box of polenta that has sat there completely neglected by me. The poor box sees me open that door 30 times a day yet is never touched or admired.

I decided that my breakfast was going to be comprised of polenta. Then I thought about how I would make it appealing to the rest of the family members: hello! bacon and cheese. And for my daughter, tomatoes. A win-win.

Problem is that I am the only one here right now eating it. Want to come over?

Trust me, it sat a bit too long posing for the camera but it is creamy….all the cheese will melt….don’t believe me? See!

BLT (Bacon, Laughing Cow & Tomato) Breakfast Polenta Bowl (4 bowls full of love)
Ingredients:
2 1/2 cups milk
1 teaspoon sea salt
1/2 cup water
3/4 cup instant polenta
2 teaspoons butter or non-hydrogenated margarine
4 slices of all natural bacon, cooked and chopped
1 organic tomato, chopped
4 laughing cow cheddar mini-bels, chopped

Directions:
1. While the bacon is cooking (stovetop, microwave or roasted), prepare the tomato and cheese.

2. Bring the milk, salt and water to a boil. Turn the heat off and then slowly add the polenta while whisking for 2 minutes. Whisk in the butter and add more salt if needed. If you prefer the polenta creamier, add more milk or water.
