CVS ExtraCare Rewards: Purse to Plate Series – Pork and Potatoes

I am learning so much about how to maximize the CVS Extrabucks (EB’s)! I had $19 from last week’s shopping trip and rolled them over into this week’s shopping needs which resulted a savings of $38.27 (Karen saved $49.77*) with the EB’s, coupons and buying sale items. In addition, I now have $10.59 in EB’s and a 25% my order coupon for my next shopping trip.

After our CVS shopping, we headed to Stop & Shop and I showed Karen why I thought the buy 1, get 1 whole pork tenderloins were a good deal. Yes, each package started at about $12 for 2 lbs of pork but you get another one for free. For my family, I can make that into 3-4 meals which meals about $1 per person per meal. Score!

In addition, the pork tenderloin is so easy and basically hands-free to cook. You can use a dry rub and then roast it or toss it in the slow cooker. You can also make BBQ pulled pork sandwiches, and even use leftovers to make fried rice or a stir-fry.

For sides:

Vegetables: I suggest buying fresh broccoli on sale for $1.69/pound (.30 savings)

Starch: A 5 lb. bag of red or yellow potatoes that you can roast while the pork is in the oven for $3.49/pound. I am sure you can get two meals out of the bag. In fact, you can make baked potato chips nachos for a snack one day!

Assuming 1 lb. of pork, broccoli and half the bag of potatoes for the meal = $10.43 for 4
