Greek Inspired Baked Potato Recipe with Bacon & Feta

You know when you are craving carbohydrates and in need of comfort food?

Well, that is exactly what happened to me Thursday afternoon so today I share the recipe that filled that need.

My friend Annie and I just had to dig in and you know what? It was my Birthday so we chatted and nibbled over these until there was barely any evidence they ever existed….

Greek Inspired Baked Potatoe Recipe with Bacon & Feta (Yield = 4)
Ingredients:
4 red potatoes, roughly chopped into 1-inch pieces
2 teaspoons of olive oil
1/2 teaspoon dried oregano
a few dashes of Kosher salt and pepper
3 pieces of bacon, cooked and chopped
1/2 cup crumbled/chopped feta
a handful of fresh parsley

Directions:
1. Preheat the oven to 350 degrees Fahrenheit.

2. Chop up the potatoes and toss with the olive oil, oregano, salt and pepper.

3. Bake/roast the potatoes for 25 minutes. Prepare the remaining ingredients.

4. Test the potatoes to make sure they are firm but easy to pierce with a fork. Toss the feta, bacon and parsley over the potatoes and serve. If you wish, toss the feta in the last 2-3 minutes of baking to soften the cheese.

    Sounds delicious! I have a big bag of potatoes that need to be baked soon, so I’ll have to try this!
