Breakfast Quinoa with Almond Milk, Wheat Germ & Cinnamon

I was reading another Rhode Island bloggers post about making her health a priority and she linked to a breakfast quinoa recipe.

I thought, breakfast quinoa is a brilliant idea so I set off to make my own.

I just finished consuming a stupid amount of it.

What the hell, I have a complete day’s worth of protein now!

Breakfast Quinoa with Almond Milk, Wheat Germ & Cinnamon (Yield = 1 generous serving)

Ingredients:
1 1/4 cup if unsweetened almond milk
1/2cup quinoa
3/4 packet stevia sweetener
1/2 teaspoon cinnamon
3/4 teaspoon wheat germ
Fruit

Directions:
1. Bring the almond milk to a gentle boil in a small saucepan. Add quinoa, return to a boil, reduce the heat to low, cover and simmer for 10 minutes.

2. Sprinkle on the stevia, cinnamon and wheat germ and mix away. Cover again and cook until almost all the milk has been absorbed, about 8 minutes. Toss on some fruit and additional milk if you want more creamy texture.

p.s. My husband added maple syrup on top of his and I did mix in a bit more milk to mine so it was more of a porridge.

    I never would have thought to have Quinoa for breakfast, this is awesome!
