Vegetarian Avocado Reuben Sandwich Recipe

I have had a very busy four hours this morning.

I have been spending it with another food blogger working on a project we are getting very close to sharing with you all.

The flurry of activity today left me very hungry so I whipped my Invisalign aligners out of my mouth and chowed down on this sandwich.

You need to do this too. Well, not the aligners part, unless you have Invisalign too.

Vegetarian Avocado Reuben Sandwich Recipe (Makes 1 sandwich)
Ingredients:
2 slices whole wheat bread
1/2-1 teaspoon olive oil spread or butter
1 slices swiss cheese
1-2 teaspoons thousand island or russian dressing
1/2 avocado, sliced
1/2 cup sauerkraut, drained

Directions:
1. Preheat an indoor grill or skillet.

2. Spread the butter on one side of each slice of bread. Layer on the ingredients and grill/toast until hot and melty.

    I’m not a big fan of sauerkraut, but I think cole slaw would make a fine substitute!
