A Refreshing Strawberry & Basil Margarita Recipe

This morning, my daughter and I were out weeding the garden and discussing what to make with the truckload of basil that we have found ourselves with again.

I was also daydreaming about a date night with my hubby when I glanced back at the basil and decided it needed to be muddled with some strawberries and tequila.

I brought the drink to my husband and he said “You forgot the salt…..and could you make it frozen for me?’ Thanks

So I made him his own and took the first for myself.

Strawberry Basil Margarita Recipe (per person)
Ingredients:
2 cups of halved strawberries
1/4 cup orange juice
2 large of 4 small fresh basil leaves
1/4 cup Tequila
2 Tablespoons lime juice
2 Tablespoons agave nectar

Directions
1. Cut the strawberries into smaller pieces and place into a 2 qt. pot with the orange juice. Bring to a boil for 1 minute and mash (I use a potato masher) the strawberries. Toss in the basil leaves, reduce to a simmer, mash gently for 30 seconds and set aside to cool.

2. Remove the basil leaves, pour the strawberries and the liquid from the pot into a blender and puree. If you wish, you can pour the puree through a mesh screen to trap & remove the seeds and extra pulp.

3. Add the tequila, lime juice, agave nectar, toss over ice, mix and serve.
