Sweet & Sassy Slow Cooker Apple Cider & Coffee Pork Recipe

While our company was here, I wanted to make some fun meals that required little time in the kitchen.

This way we had more time to roam, play, explore and spend time together. Therefore, I pulled out the slow cooker and within 5 minutes, I had a dish in the cooker and waiting for us 6 hours later.

Now, I called this ‘sweet’ because the vegetables tasted sweet while the pork was just a bit ‘sassy’. And we all need a bit more sweet & sassy in our lives, don’t we?

Sweet & Sassy Slow Cooker Apple Cider & Coffee Pork Recipe (serves 6-8)
Ingredients:
1/2 large sweet onion, sliced
1 clove garlic, thinly sliced
2 stalks of celery, chopped
2 carrots, chopped into coins
3 pounds boneless pork tenderloin (I had two 1.5 tenderloins; cook longer if one 3 lb. piece)
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 cups apple cider
1/3 cup coffee syrup (such as, Dave’s all-natural coffee syrup)
4 tablespoons vinegar (I used balsamic)

Directions:
1. Place the onion, garlic, celery and carrots in the bottom of the slow cooker, trim the excess fat off the pork and season it with salt and pepper and place on top of the vegetables.

2. Set for 8 hours on low.

3. If you can, baste the pork once or twice during cooking.

    We love making pork tenderloin, will have to give your recipe a whirl, using the oven on slow since I do not slow cooker things. Like the use of the coffee syrup in this recipe, it is one of our favorite “secret” ingredients.
