Italian Shrimp Antipasto Salad Recipe {Clean Eating, Gluten-Free, Dairy-Free}

On New Year’s Eve, we had some friends over and asked everyone to bring a savory dish to share.

This recipe was a huge winner and is so easy and adaptable. If you want it to be Vegan as well, simply omit the shrimp.

Happy New Year 2014!

Italian Shrimp Antipasto Salad Recipe (Yield varies)
Ingredients:
Raw and deveined shrimp
olives
grape tomatoes, halved
carrots, sliced
roasted red peppers
sun-dried tomatoes, packed in oil
olive oil
fresh basil or parsley

Directions:
1. Boil shrimp in salted water, and set aside in cold ice water.

2. Meanwhile, toss together the olives, grape tomatoes, carrots, roasted red peppers, and sun-dried tomatoes in a large bowl.

3. Drain shrimp and add into the vegetables, drizzle with olive oil and top with fresh basil or parsley.

Looks like someone has a resolution to grab food while being photographed (it looks like he is touching the shrimp but he is not nearly as close nor is he on a table).
