Sautéed Garlic Olive Oil Chickpeas

I love snacks. You love snacks. We don’t always make the best snack choices. I am going to help you make a better snack choice. Make these chickpeas and snack on ’em.

Ingredients:
½ cup extra virgin olive oil
3 large cloves of garlic, crushed
1 can organic chickpeas/garbanzo beans, drained and patted dry
fresh minced parsley, optional

Directions:
1. Heat the oil, in a sauté pan, over medium-low heat.
2. Lower heat to low/simmer, add the crushed garlic to the pan, stir regularly to avoid browning the garlic. Allow to simmer for about 10 minutes to infuse the oil.
3. Remove and discard the garlic. Gently add the chickpeas, increase to heat to medium-low, and sauté for about 10 minutes, stirring regularly.
4. Transfer the chickpeas to a plate, season with salt and parsley to taste.
Store in an air-tight container but consume within a day or two.
