Fizzy Champagne Poke Cake with Whipped Icing

Happy New Year 2017! For a fun New year’s Eve dessert, I made a poke cake with a whipped topping.

I don’t know about you all, but I was sipping on the bubbly last night.

In fact, the bubbly was flowing for the adults, and the kids (in the form of sparkling cider).

Normally, if I am short on time or the kids make a boxed cake, I will whip up the icing using whipped cream. However, my hubby was at the store when I decided to make this so I asked him for a boxed mix, a tub of whipped topping, and some strawberries.

Champagne Poke Cake

 Ingredients:
1 boxed white cake (and all required ingredients noted on the box)
Whipped topping or your favorite icing
¼ cup tablespoons champagne or sparkling wine

Directions:
1. Make and bake a boxed cake per manufacturer’s instructions.

2. Set the cake aside and allow to completely cool. 

3. Using a skewer, dowel, or end of a wooden spoon, poke holes all over the cake.

4. Using a brush, spread the champagne or sparkling cider all over the cake.
