Spicy Roasted Vegetables {Potato, Red Pepper, and Broccoli} Recipe

Spicy Roasted Vegetables. Roasting vegetables is a great way to bring out their natural sweetness.

I know, I have heard it a bajillion times. “You are not a fan of vegetables”. “Vegetables are boring”. “Vegetables have no flavor.”

Well, I heard enough of your complaining and like most Moms, I’ll prove you wrong.

Roasting vegetables is a great way to bring out their natural sweetness.

Potatoes may not have a big change in flavor, but the peppers and broccoli get mighty sweet for your tasting pleasure, and the dried red peppers are a spicy surprise.

Ingredients:
2 cups tri-color baby potatoes, cut into bite size pieces
1-2 cups broccoli, chopped into bite size pieces
½ red pepper, cut into thick slices
2 Tablespoons olive oil
1 teaspoon dried red pepper flakes
Salt and pepper to taste

Directions:
1. Preheat oven to 425 degrees Fahrenheit.

2. Chop potatoes, broccoli, red pepper and place into a large bowl.

3. Drizzle on the olive oil, toss well, and season with the dried red pepper flakes, salt, and pepper.

4. Bake for 25 minutes. Test to see if potatoes are fork tender and cook 5 more minutes if necessary.
