Vegan Baby Kale and Spinach Potato Soup Recipe

A Vegan Baby Kale and Spinach Potato Soup Recipe that will warm your soul and provide lots of nutrition.

Not many of us think about having Kale and Spinach Potato Soup for breakfast, but that is exactly what I did. I have been making, and freezing, many soup recipes so that I have some healthy choices at hand to bring to, and enjoy after my stay at the hospital. While I was packing up the containers, I had one small bowl full left so I ate it for breakfast.

And let’s be honest about another thing: most of the food offered at the hospital is not along the lines of healthy. Plus, I figured if I have lots of soups frozen and ready for me while recovering from the stem cell transplant, it will be easy for my husband to work, and get me some healthy food in a speedy fashion.

A Vegan Baby Kale and Spinach Potato Soup Recipe that will warm your soul and provide lots of nutrition.

Ingredients (serves 4):
1 tablespoon avocado or olive oil
1 1/2 pounds organic Gold potatoes
1 large shallot, chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried turmeric
A dash each of salt and pepper
4 cups organic Vegetable broth
3 cups of water
6-8 cups of organic baby spinach and kale
1/4 teaspoon organic coconut aminos (or soy sauce)

Directions:

  1. Heat the oil in a large Dutch oven or pot over medium-high heat. Add the potatoes, stirring frequently, for 2-3 minutes.
  2. Add the shallots, dried thyme, turmeric, salt, and pepper. Stir continuously for a minute or so. Pour in the broth and simmer for 10-15 minutes.
  3. Toss in the kale spinach mix, and the aminos. Stir well and allow to simmer for 5 minutes.
  4. Once the soup in cooled, use an immersion blender, or blender (in batches), and puree. Serve topped with dried beets, sliced almonds, or even the cult-favorite Trader Joe’s ‘Everything but the Bagel’ spice.

    I love all these veggies. And soups are the easiest way for my kid to have vegetables. I need to put this recipe on my menu!

    That seasoning from Trader Joes is so good! Everytime I go they are always low or ran out of it!!
